After BYU
Simon signed with the Carolina Panthers as an undrafted free agent in 2021. He had a stint int the 2022 season with the BC Lions in the CFL. He entered the coaching ranks as a wide receivers coach at Northern Colorado in 2023.
Career Highlights
- Rose from all-around athlete to becoming one of the Cougars' more reliable receivers during his time in Provo
- Finished his career with 90 receptions for 1,109 yards and five touchdowns, plus two rushing scores
- Led the Cougar receivers in his senior season with 51 receptions and was second on the squad with 651 receiving yards
- Perhaps best remembered for his game-saving catch Sept. 7 of his senior season at Tennessee that helped key the Cougars' rally for a 29-26 road win over the Vols
Before BYU

- As quarterback, led Bishop Dunne Catholic High School to its first TAPPS (Texas Association of Private and Parochial Schools) Division I State Championship in 24 years with 195 passing yards and three touchdowns, as well as a game-breaking 99-yard touchdown run for the Falcons who finished the season 12-1 and 6-1 in district
- Recorded seven total touchdowns including six rushing in senior season
- Named to the TAPPS All-State Division I Second Team
- Named to the Tom Hillary Fort Worth-area private school all-star football team
- Coached by Michael Johnson
- Recruited by Air Force, Cornell, Grambling, Texas State, Southern Methodist and Southern Mississippi.
